Bachensteiner is a semi-soft, smear-ripened cheese from the Vorarlberg state in western Austria, which has similarities with the Alsatian MÌnster and the Limburger from the AllgÀu. Bachensteiner gets its name from its oblong-rectangular shape and the reddish color of its rind (Backstein = brick). The aroma is meaty and intense and the taste is fruity, spicy and delicately floral.
The SibratsgfÀll dairy was founded in 1907 as a cooperative dairy. The dairy works closely with their members, who each day delivers the milk of their Swiss Brown cows directly to the cooperative. All the farms are located closely to the dairy and ensure that their cows are fed exclusively on pasture or hay year-round.
